Frank Cuellar Collection at the University of North Texas -- the Cuellars were Hispanic farm workers in Kaufman - their mother, Adelaida Cuellar, began selling tamales & tortillas in Kaufman the early 1900's & in the 1920's opened a small restauarant on the south side of Kaufman - from there they moved to Terrell in 1930's Dallas.  Within 40 years they built a chain of nearly 100 restaurants.  This is a very good site with photos & accurate history.
